Recipe

Traditional tea:

- Sift 2g (about 1 tsp) with 30 mL of hot water at 80º C
- Whisk using a bamboo whisk until a "microfoam" is formed
- Add 120 mL hot water (not boiling) to the whisked hojicha and enjoy hot

To make a perfect iced latte:

- Sift 2g (about 1 tsp) hojicha and whisk with 30 mL hot water at 80º C
- Add 90-100 g ice and 100 mL oat/almond milk to a glass (Dairy milk can also be used)
- Pour the whisked hojicha on top of the ice to create a beautiful layered drink and enjoy

- Hojicha, just like regular tea and coffee, contains small amounts of tannin, which "may" reduce iron absorption. Avoid consuming hojicha closer to meals and iron-rich foods

What does hojicha taste like?

Toasty and warm, with a pronounced nuttiness and a caramel-like sweetness that develops mid-sip. Rounded and satisfying, slightly smoky without being harsh. The aroma is as much a part of the experience as the taste - the moment you open the tin, the smell is immediate and deeply comforting. In a latte with oat milk and honey, it tastes remarkably similar to a chocolate shake. In traditional preparation with just water, the nutty roasted character stands cleanly on its own.

What is hojicha and how is it different from matcha?

Both come from Camellia sinensis and are consumed as powders. The difference is in processing. Matcha leaves are steamed and stone-ground, preserving green colour, grassy flavour, and full caffeine. Hojicha leaves and stems are roasted at high temperatures, breaking down chlorophyll, degrading most caffeine, and creating nutty, caramel flavour compounds through Maillard reactions. Same plant, two completely different beverages.

Can I drink hojicha if I'm sensitive to caffeine?

Yes - hojicha is one of the best teas for caffeine-sensitive individuals. With roughly 7–10mg per serving, it sits well below the threshold that affects most people's sleep or anxiety levels. "Low caffeine" is not the same as "caffeine-free" - hojicha does contain small amounts - so if you have a diagnosed sensitivity or health condition, consult your healthcare provider.

Why is Mezame Hojicha described as "India's first"?

When Mezame launched Hojicha, authentic Japanese roasted green tea powder was not available as a retail product in India. Japanese hojicha existed only as loose-leaf tea at a handful of specialty shops and as a café ingredient - not as something you could buy and make at home. Mezame sourced directly from Kagoshima and brought the powder format to the Indian market for the first time. If you've had hojicha at a café in India and wanted to make it at home, Mezame is where that became possible.

Do I need a bamboo whisk?

It's ideal to use a bamboo whisk since it aerates the hojicha well, breaks clumps and enhances the flavour and health benefits. However, to get stated, you can simply use an electric frother.

Good quality hojicha requires:

Only ~40g of hojicha can be ground per hour per stone mill.
