What does Tsuki taste like exactly?
Gentle umami with a creamy, almost velvety mouthfeel. Slightly earthy and vegetal, but never bitter or grassy. The aftertaste is clean - it lingers pleasantly without any astringency. In a latte with oat milk, it becomes sweeter and more rounded. In usucha with just water, the umami depth comes forward more clearly.
How is Tsuki different from Mizu, Yuki, and Niwa - Mezame's other matchas?
All four are ceremonial grade from Kagoshima, but they serve different drinkers. Tsuki (Yabukita + Saemidori, 2–3 weeks shade) is the most approachable - smooth, mild, perfect for lattes and daily use. Mizu (3–4 weeks shade) is for those who drink with water only (of course works perfectly well with lattes alike) - moderate umami, more earthy. Yuki is a single-cultivar Okumidori limited edition with natural sweetness and creamier froth. Niwa is the rarest - single-cultivar Asatsuyu, hand-harvested, 4 weeks shade. If you're starting out or want a daily driver, Tsuki is your matcha.
What makes Tsuki different from other ceremonial matchas sold in India?
Most matcha sold in India is low-grade culinary matcha in ceremonial packaging. Tsuki is 100% JAS certified organic — verified under Japanese Agricultural Standards - sourced directly from Kagoshima's fertile volcanic soil region, then stored in India in temperature-controlled refrigerators before reaching you. That's a fundamentally different supply chain from what most brands offer.

Why does Mezame refrigerate its matcha before shipping?
Matcha degrades quickly when exposed to heat, light, and moisture. Most brands store at room temperature in warehouses - by the time it reaches you, it may have lost significant colour, aroma, and antioxidant potency. Mezame cold-stores all matcha in temperature-controlled refrigerators. This is the single biggest reason our matcha tastes fresher than most alternatives.
What is JAS certification and why does it matter?
JAS stands for Japanese Agricultural Standards - Japan's government-regulated organic certification. JAS certified matcha means tea plants were grown without synthetic pesticides or fertilisers, under conditions audited by certified inspectors. It is stricter than many other "organic" labels. When you see JAS on a Mezame product, the certification was verified in Japan - not self-declared by the brand.
Does matcha taste like grass?
Good quality matcha tastes either umami, earthy or a combination of complex flavour profiles - far from grassy.
